Roast beef is an English dish. It’s a baked piece of beef in a stove. Meat of medium quality is ideal for the dish. It should be without bones and fat. You don’t need special skills to cook it.

Time for preparation: 20 min
Time for cooking: 3 hours and 15 min

Ingredients for 6-8 portions:

  1. 1.8kg beef (external part of hip cut, high rib or breast) 
  2. 3 spoons of oil
  3. 1 onion
  4. 1 big carrot
  5. 1 big clove of garlic
  6. 300ml red wine
  7. Bay leaf
  8. 400g fresh or canned tomatoes
  9. Salt
  10. Milled black pepper

Preparation:

  1. Heat your stove to 150°C.
  2. Pour oil in a deep stewing pan or a saucepan with a thick bottom. Fry meat quickly on all sides.
  3. Chop onion, garlic and carrot.
  4. Take the meat out of the deep stewing pan and put all the vegetables there. Fry them until they become golden. Add all the rest ingredients. Bring to a boil.
  5. Put meat to the vegetables. Salt and pepper.
  6. Bake it in a stove for 3 hours under a lid. After 1.5 hour turn the meat on the other side.

Advice:
If your deep stewing pan or a saucepan doesn’t close tightly, cover it with foil.
Keep the meat in a warm place under a lid before serving.

Cook sauce of the braised vegetables: chop them in a blender (but take out the bay leaf) and boil in a saucepan, removing fat. If it’s too thick, add some water and boil it again.

Slice meat into thin pieces. Before serving, pour sauce over the top.
