The dish is quite simple in taste, it’s cooked at home, but resembles shish kebab. Anyone can cook it, even that without cookery skills.

The meat is perfect for a romantic dinner with red wine.

Time for preparation: 2.5 hours + pickling

Ingredients for 6-8 portions:

  1. 1kg pork collar
  2. 300ml red semidry wine
  3. 3 cloves of garlic
  4. Salt
  5. Milled black pepper
  6. Sweet pepper for decoration

Preparation:

  1. Wash and dry meat. Peel garlic and cut it into shoestrings. Stuff the meat with garlic. Sprinkle the meat with seasoning and salt.
  2. Pour in red wine, cover with a lid and leave for a night.
  3. Put pickled meat on 4 layers of foil and wrap tightly.
  4. Put the meat on the baking tray and bake in the stove at the temperature of about 180˚C for about 2 hours.
  5. Take the meat out of the stove 15 min before the end, cut the foil a little and pierce the meat with a knife. If there is pink juice – increase the time of baking. If the juice is light, the dish is ready.
  6. Take the ready meat out of the stove, remove the foil and cut into pieces, put them on plates. Decorate with vegetables and greens.
  7. You may serve the baked pork both hot and cold as a snack.

Advice:

Choose not very lean meat, the baked pork will be sappier.
Add peppercorn and bay leaf while pickling.
You can also stuff the meat with carrot.
If you want the pork with crust, smear it with mayonnaise and fry a little on a hot pan with oil.
