Omelette with potatoes and sweet pepperThis recipe is called up by the coming spring. Because in spring we want something bright, healthy and delicious. The special taste is given by tomatoes, onion and dill.

Time for coking: 35 min

Ingredients for 4 portions:

  1. 1 kg potatoes 
  2. 100ml oil 
  3. 4 Bulgarian sweet peppers 
  4. 4 tomatoes 
  5. 4 onions 
  6. 6 eggs 
  7. 2 leafs green onion 
  8. Dill 
  9. Salt 
  10. Milled black pepper 

Preparation:

  1. Peel potatoes and slice it in round pieces. 
  2. Cut out the middles of the peppers and chop it into stripes. 
  3. Chop tomatoes into not very big pieces. 
  4. Slice leafs of green onion into rings. Chop onion. 
  5. Chop the dill. 
  6. Fry potatoes on both sides until it gets golden crust. 
  7. Add pepper in the pan and fry stirring for another 5 min. 
  8. Whip eggs in a separate bowl; add dill, salt, black pepper. 
  9. Divide potatoes and pepper into 4 parts. Put 1 part on a pan, pour in ¼ eggs, fry it. Then do the same with the rest of the potatoes, pepper and eggs. 
  10. Fry tomatoes and onion and serve with omelette. 
  11. Decorate the dish with greens and chopped green onion.
