This recipe proceeds the series of recipe with incompatible in their taste ingredients. If you remember we started with borscht with prunes and now let’s proceed with a fairly harmonious dish – hunchback salmon with pears.

Hunchback salmon is dry fish. But if you cook it correctly, add juicy pear, you’ll make a small fest for your stomach.

Time for preparation: 30 min.

Ingredients:

  1. 1kg hunchback salmon
  2. 2 spoons of vegetable oil
  3. 2 big pears
  4. 4 twigs of parsley
  5. Milled black pepper
  6. 2 spoons of butter
  7. 1 teaspoon of mustard
  8. ¼ teaspoon of dried basil
  9. 2 onions
  10. 3 carrots
  11. 1 cube of chicken broth
  12. 4 tomatoes
  13. 1 lemon
  14. Salt

Preparation:

  1. Cut pears into 4 pieces, remove the middles.
  2. Melt butter; mix it with chopped dill, salt, mustard, basil and pepper.
  3. Smear pears with this mixture and braise for 5 min with oil.
  4. Slice onion into circles and cut carrots into shoestrings.
  5. Fry the vegetables with the same oil, add the pears, pour in 4 spoons of water and add the cube of chicken broth. Braise for another 5 min.
  6. Scald tomatoes, peel them and cut into segments.
  7. Peel lemon and slice.
  8. Cut the salmon fillet.
  9. Put tomatoes on the pears and fried vegetables and half of the lemon slices, put salmon over them, add salt and pepper, and braise under a lid.
  10. Decorate with dill and the rest of lemon before serving.
