Schnitzel is another name for a common chopped cutlet. But actually it’s an Austrian type of escalope – a thin piece of veal, pork, mutton, chicken or turkey, rolled in breadcrumbs or flour and fried with oil.

A properly cooked schnitzel is gold yellow and has a crackling.

Time for preparation: 15 min
Time for cooking: 30 min

Ingredients for 4 portions:

  1. 2 chicken breasts
  2. 1 big carrot
  3. 1/8l meat broth
  4. Salt
  5. Grounded black pepper
  6. Grounded red pepper
  7. 3 spoons of flour
  8. 2 spoons of butter
  9. 80g cheese

Preparation:

  1. Peel carrot, slice it into pieces 0.5cm thick.
  2. Braise the carrot in meat broth for 5 min.
  3. Cut chicken breasts into 2 pieces.
  4. Salt and pepper the chicken.
  5. Roll each piece in flour.
  6. Heat butter in a pan and fry chicken on it.
  7. Put the chicken on a smeared grill pan, put cheese on it and grill.
  8. Decorate the schnitzel with braised carrot and greens before serving.

Advice: baked potatoes is a good garnish for the schnitzel.
