Carrot pancakesI offer you today a recipe of tasty and healthy pancakes, made of available for everybody product – carrot.
Carrot is so usual for us that we forget about its healthy qualities. It contains plenty of necessary vitamins and minerals. If you eat carrot every day, your organism is more likely not to succumb to illnesses and infections.

Everyone even a beginner can cook this simple dish.

Ingredients:

  1. 1kg carrots
  2. 100g cream
  3. 2 eggs
  4. 2 spoons of semolina
  5. 1 spoon of sugar
  6. Salt
  7. 200g dried apricots
  8. Dried bread crumbs
  9. Vegetable oil

Preparation:

  1. Grate carrots.
  2. Chop dried apricots and boil a little.
  3. Add cream to the carrots and braise it under a lid.
  4. Add semolina, boiled dried apricots, salt, sugar, egg yolks to the hot carrots.
  5. Mix everything.
  6. Whisk the egg white.
  7. Form cutlets of the carrot mixture, dip them into the whisked white, roll in dry bread crumbs and fry on both sides with vegetable oil.
