Solyanka is a thick soup based on meat, fish or mushroom broth with hot seasoning. There are 3 kinds of this dish: meat, fish and mushroom solyanka.

I would like to share with you my recipe of solyanka which is a wonderful dish for every kind of meal, whether it is a lunch or a dinner. My solyanka is not a soup but stewed vegetables. The characteristic feature of my recipe is the amount of layers and a combination of flavours which makes the dish quite unusual.

Ingredients:

  1. Mushrooms, 500 gr.
  2. Cabbage, 1 kg.
  3. 1 pickled cucumber
  4. Tomato paste or sauce, 2 table spoons.
  5. Vinegar, 1 tablespoon.
  6. Vegetable oil, 2 tablespoons.
  7. 1 onion.
  8. Dried and finely ground breadcrumbs, 1 tea spoon.
  9. Salt.
  10. Olives.
  11. Lemon for decoration.

Preparation:

  1. Cut the cabbage into not large pieces, put into a medium-sized pan, pour some water, vinegar, vegetable oil and stew for about an hour. In case you have taken young cabbage, stew it for about 10 min.
  2. Add the cabbage and tomatoe paste when there will be 15 min. left before the dish will be ready.
  3. Boil the mushrooms for 10 min., pour out the water. Cut the mushrooms into the shoestrings, fry with little vegetable oil.
  4. Peel the onion, cut into small cubes and fry over a medium heat till the golden colour.
  5. Take a medium-sized pan and put half of the stewed cabbage there. Put the mushrooms and the onion on top and then again make the layer of cabbage.
  6. Add salt and sprinkle the dish with dried breadcrumbs.
  7. Bake in an oven for 10-15min.
  8. Decorate the dish with segments of lemon and olives.
