This light summer cream is suitable for sandwiching cakes, puffed light cakes, shortcakes and sponge cakes. The cream will also go as a wonderful filling for scalded cakes.

Ingredients:

  1. Fresh berries, 100 gr.
  2. 30 % -fat cream,100 gr.
  3. Sugar, 100 gr.

Preparation:

  1. Take any fresh berries (blackcurrants or red currants, strawberries, raspberries, bilberries, blackberries or others), flush, add sugar and mash.
  2. Bring the mass to a boil, put it through a sieve when it’s still hot. Let it cool.
  3. Then stir well adding cream and whip with the help of a mixer.

      Tips:

You can use soft butter or sour-cream instead of cream.
