Tatar is a traditional French dish, it’s cooked very quickly. Take the best piece of meat for the dish – rump or fillet. It is cooked very quickly. Don’t be afraid that meat is served raw. I recommend you this dish!

Ingredients for 4 portions:

  1. 900g lean beef
  2. 4 egg yolks
  3. 1 onion
  4. Warcher sauce (or soy sauce)
  5. 50g capers or 2-3 pickles
  6. Salt
  7. Milles black pepper

Preparation:

  1. Remove all fat and veins from meat.
  2. Mince the meat. Add salt and pepper.
  3. Put the minced meat on 4 plates, forming small hills.
  4. Make a hole in each hill and put a yolk in it.
  5. Around each hill put chopped onion and capers or chopped pickles.
  6. Pour sauce in a separate bowl.
  7. Tartar is eaten raw, mixing with yolks and seasoning.

Advice:

You can serve tartar separately: minced meat with yolks on one plate, pickles or capers, cucumbers on another, sauce in a sauceboat.
