Airy almond pastry is light and friable, it is cooked very easily. Keep in mind that hands and the dishes should be chill.
It’s considered that fancy pastry is not easily cooked. It’s rich in fat, which melts in your hands. The secret is that it should be kneaded tenderly.

Time for preparation: 10 min + chilling

Ingredients for 400g of pastry:

  1. 175g flour
  2. Salt
  3. 75g soft butter
  4. 2 egg yolks
  5. 65g milled almond
  6. 50g sugar powder
  7. 2 drops of vanilla essence

Preparation:

  1. Pour flour on the table, pour almond and salt over it.
  2. Make a hole in the middle of the hill, put sugar powder, yolks and essence in it.
  3. Mix yolks and sugar powder with your hands.
  4. Add butter and continue mixing adding flour and almond step by step.
  5. Knead the pastry and then wrap it with a film and put it in the fridge for 30 min.

Advice:

This pastry can be cooked in the kitchen machine. This method has an advantage: you need little effort. Knead the pastry until becomes a ball.

To chalk up:

Bake the pastry until it becomes golden. If you bake it further – almond and sugar will burn.
