Strawberry jam

Judging by my experience of making jam (I’ve been preparing jam for several years already), I can say that the most delicious jam comes out of the last harvest. At that time the berries are the sweetest and the most suitable for jam.

Today I’m going to tell you a secret how to make jam but not porridge. If you stick strictly to the following instructions you will succeed in making your jam delicious.

Yesterday was the day when I decided to spend minimum efforts and to make a delicious and healthy dinner. Frankly speaking, I’m a little bit sick of all these meat, fish and chicken dishes. That’s why dumplings were exactly what I needed.

Dumplings can be served with sugar, jam, sour cream or just mashed berries. And also the dish will taste especially delicious if you fry them till a golden colour after boiling.

Firstly, I was about to make a cake with strawberry. I’ve decided to take the standard recipe of a cake and add some berries there.

But I’ve changed my plans when I was preparing the dough. I’ve decided to take bilberries instead of strawberries.  As a result I came to a conclusion that, if I had used strawberries, the cake would have been not so tasty. Strawberry, when used in baking, becomes soft and watery and looses its taste. But with bilberries it’s quite the opposite.

Ingredients:

  1. 4 eggs.
  2. Sugar 1 1/3 glass.
  3. Flour, 2 glasses.
  4. Butter (soft), 175 gr.
  5. Sour cream, 1 glass.
  6. Baking powder, 2 tea spoons.

Berry cream

This light summer cream is suitable for sandwiching cakes, puffed light cakes, shortcakes and sponge cakes. The cream will also go as a wonderful filling for scalded cakes.

  2. 30 % -fat cream,100 gr.

Pork rolls with surprise

It is really quite difficult to prepare pork in order to make it soft and delicate.  Frankly speaking, I’m a little bit sick of ordinary pork chops and that’s why today I offer you a recipe of rolls with prunes.

If you don’t like prunes, you can use nuts or mushrooms instead.

Ingredients:

  1. Lean pork, 500 гр.
  2. Salt
  3. Black milled pepper
  4. Oregano, ½ tea spoon.
  5. Prunes,300 gr.
  6. 2 onions.
  7. Vegetable oil, 2 table spoons.
  8. Garlic, 1 clove
  9. Aluminium foil.

Summer is wonderful time of the year when you can refresh your body with vitamins.

Last week I prepared vegetable rolls. Frankly speaking, my husband didn’t understand at first that he was eating healthy and substantial food which didn’t contain a gram of meat.

I like summer because it gives a wonderful opportunity to get all the vitamins from vegetables, fruit and berries. And it is summer when we can enjoy dishes of cauliflower.

Generally speaking, cauliflower is healthy and good both for children and adults. I’ve recently got to know that cauliflower protects from harmful substances and removes toxins.

  3. Vegetable oil

Salad “Jewish”

My husband is fond of having lunch and dinner at my mum’s. She treats him with his favourite salad—Jewish. This salad is very simple and its ingredients are similar to salad “Olivje”. Though my husband tends to find faults in food, he likes the salad. That’s way you’ll enjoy the salad, too.

Ingredients:

  1. 4 Potatoes
  2. 1-2 Carrots
  3. 2-3 pickled cucumbers.
  4. Onion
  5. 3 Eggs
  6. Marinated herring (fillet), 300 gr.
  7. Boiled or tinned haricot beans, 150 gr.
  8. Vinegar, 2 table spoons.
  9. Sugar, ½ tea spoons.
  10. Salt
  11. Black milled pepper
  12. Mayonnaise, 200-250 gr.

Orange jelly with fruits.

Personally I didn’t have self-made jelly in my kitchen for a long time. As a rule I buy it in packets, which I wouldn’t make if it were not for my husband.

The recipe is delicious and healthy as there are fresh and natural ingredients: juice and fruit.

Ingredients:

  1. Orange juice, 750 ml.
  2. Gelatin, 5 heaping tea spoons.
  3. Grapes, 150 gr.
  4. Sweet cherries, 200 gr.

My husband and I usually have lunch not at home. He goes to a restaurant (3-4 dollars is enough for a complex lunch). I have lunch at work. We have a small kitchen in our office. Not long ago my workmate treated me with borsch.

It was red, as it should be traditionally, but its contents had not much in common with borsch. And, of course, I asked her mum for the recipe of this wonderful soup.

There is sorrel instead of cabbage in the recipe of the borsch. The only standard ingredients are beet, potato and carrot. It resembles the usual borsch, but has a specific taste of its own, because of the sorrel.

The advantages of the dish: fresh vegetables, lightness of the soup, the new taste (that you can enjoy only in summer). But, be careful, don’t make stains!)

Ingredients:

  1. Potatoes, 0,5 kg.
  2. 1 Carrot.
  3. 3 Beets.
  4. 1 Onion.
  5. Sorrel, 500-600 gr.
  6. Sour cream, 100 gr.
  7. Butter, 50 gr.
  8. Flour, 1 table spoon.
  9. Vinegar, 1 tablespoon.
  10. Sugar,1 tablespoon.
  11. Salt
  12. Peas of pepper
  13. Bay leaf.
  14. Green dill and parsley
